- 3-4 lbs apples, peeled, cored, quartered
- 4 strips lemon peel
- 1 lemon lemon juice, about 3-4 TBPS
- 3 inches cinnamon stick
- ¼ cup dark brown sugar
- ¼ cup sugar
- 1 cup water
- ½ teaspoon salt

1. Put all the ingredients into a large pot. Cover. Bring to boil. Lower heat and simmer for 20-30 minutes. |
2. Remove from heat. Remove cinnamon sticks and lemon peels. Mash with potato masher. |
3. Reserve to serve, either hot or refrigerated. Delicious with vanilla ice cream or vanilla yogurt. Freezes easily, last up to one year in a cold freezer. |
