  • 1 ½ cups Sugar
  • 4 ea Eggs
  • ½ cup Vegetable oil
  • 2 tablespoons Orange juice
  • 1.3 tablespoons Orange peel, grated
  • 1 tablespoon Vanilla extract
  • 4 cups All-purpose flour
  • 1 cup Walnuts, finely chopped
  • 2 teaspoons Baking powder
  • ½ teaspoon Salt
  • 2 cups Tart dried cherries, finely chopped
  • 2 ea Egg white
  • 2 tablespoons Water
  • Sugar, as needed
  • Chocolate for dipping, as needed

directions

Method:
1. Combine 3/4 cup sugar and eggs in mixer. Mix on medium speed.
scrape bowl often. until thick and pale yellow in color.

2. Add oil, orange juice, orange peel, and vanilla, beat 1-2 min.

3. Combine flour, walnuts, baking powder, and salt, gradually add to egg
mixture. mix on low 1-2 minutes.

4. Stir in cherries by hand.

5. Turn dough onto lightly floured surface (dough will be soft and
sticky). Sprinkle dough lightly with flour, knead in. With floured hands
shape into 2- 8x2 logs.

6. Place 3-4 inches apart on sheet tray, flatten tops slightly.

7. Combine egg white and water, brush top of logs. Sprinkle with sugar.

8. Bake in pre-heated oven 25-30 minutes or until light brown and firm
to touch. Let cool on sheet tray for 15 minutes.

9. Reduce oven temp to 300 degrees. Cut logs diagonally into 1/2 inch
slices with serrated knife. Arrange slices cut side down on sheet tray.

10. Bake for 8-10 minutes, turn slices bake 8-10 minutes or until golden
brown. Cool. 20-25 slices per log; yeild 2 logs
