  • 12 ounces Sugar
  • 2 teaspoons Salt
  • 4 ea Eggs
  • 4 Tbsp Coffee extract
  • 20 onuces Pastry flour
  • .5 ounce Baking powder
  • 7 ounces Blanched almonds slivers
  • Chocolate for dipping, as needed

directions

1.Creaming method.

2.Mix in almonds after adding the sifted ingredients.

3.Make-up—bar method—divide dough in 4 equal pieces and roll into log.

4.Egg wash and bake at 325.

5.Let cool then cut on bias. Place cut side down on sheet tray and bake at 275 F until dry.

20-25 slices per log; 4 logs - 14 oz each
