- 8 ea Eggs
- 20 ounces Sugar
- 2 ½ Tbsp Hazelnut liqueur
- 2 Tbsp Vanilla extract
- 4 ea Oranges zest, zest of oranges
- 37 ounces All-purpose flour
- 2 teaspoons Baking soda
- 1 teaspoon Salt
- 12 ounces Hazelnuts, toasted
- White chocolate for dipping, as needed

1.Mix the eggs, sugar, hazelnut liqueur, vanilla, and orange zest in a mixing bowl until smooth. 2.Combine the flour, baking soda, and salt. 3.Add to egg mixture and incorporate. 4.Fold in toasted hazelnuts. 5.Divide dough in to 1 lb pieces. 6.Roll each log out the width of a sheet tray. 7.Place logs on sheet tray. 8.Flatten logs slightly. 9.Egg wash tops. 10. Bake at 325 F until firm and golden brown. 11. Cool then cut with a serrated knife about ½ inch slices on a bias. 12. Re-bake at 325 F until dry. 13. Biscotti with crisp as cools. 14. When biscotti is cool dip in melted white chocolate and let set. 20-25 slices per log; yield 4 logs |
