  • 8 onuces Butter
  • 20 ounces Peanut butter
  • 32 ounces All-purpose flour
  • 9 ounces Roasted peanuts, finely ground
  • 2 onuces Baking powder
  • .4 ounces Salt
  • 12 ea Eggs
  • 15 ounces Sugar
  • 15 onuces Brown sugar
  • .8 ounces Vanilla extract
  • 24 ounces Peanut butter chips
  • 16 onuces Roasted peanuts, coarsely chopped
  • Peanut butter chocolate for dipping, as needed

directions

1.Melt butter and peanut butter in a saucepan until smooth, set aside and cool.

2.Whisk flour, ground peanuts, baking powder, and salt together, set aside.

3.Beat eggs in a mixing bowl until light, approximately 2 minutes. Gradually add both sugars and vanilla.

4.Drizzle in the peanut butter mixture and beat until well mixed.

5.Add the reserved flour mixture.

6.Fold in the peanut butter chips and coarsely chopped peanuts.

7.Divide dough in about 1 lb logs, roll into a log approximately the width of a sheet tray.

8.Egg wash and bake at 350 F until firm.

9.Cool, cut biscotti and re-bake until dry.

10.Cool then they can be dipped in melted chocolate if desired.

20-25 per log; yeilds 10 logs
