- 1 pkg - 8ct Cresent Rolls
- 1 lbs Ham, diced
- 2 ounces Butter
- 12 ounces Potatoes, diced
- ½ Green Pepper, diced
- ½ Onions, diced
- 1 cups Cheddar Cheese, shredded
- 12 Eggs
- Salt & Pepper, as needed
- Franks hot sauce, as needed
- 1 ounces Parmesan, freshly grated
- 1 Foil Pan, disposable pan 10x13

1. Preheat oven to 375°. |
2. Dice ham into small cubes or cook and drain ground sausage. Dice onions and green peppers and saute for a few minutes until onions are transparent. In melted butter, saute diced potatoes until light golden brown. |
3. In a 10x12 pan, coat with cooking spray generously, line bottom with 1 tub of crescent rolls (do not separate at seams but rather seal seams and press sides up sides slightly. |
4. Layer meat, followed by potatoes, onions & peppers, cheddar cheese, spices. Whip eggs with mixer, add hot sauce to eggs, cover ingredients with eggs, then grated parmesan cheese. |
5. Bake in oven for 45-60 minutes until eggs are firm. You may need to cover top with foil if it browns before eggs are set-up. Let rest a few minutes before cutting. |
6. NOTES: spread out all the pans and evenly distribute ingredients one layer at a time to assure even amounts in each pan. |
