- 1 tsp. gelatin
- 1 tsp. water
- 3.5 oz. dark chocolate with orange oil
- 3 Tbsp. heavy cream
- 1 egg yolk
- ¾ Tbsp. granulated sugar
- 1 ¼ cups heavy cream

1. Sprinkle the gelatin over the water in a small bowl and set aside. |
2. In a very small saucepan, bring the 33g cream to a boil and pour over the chocolate. Stir until all the chocolate has melted and set aside. |
3. In a double boiler over simmering water (not touching the bottom of the bowl), whisk together the egg yolk and sugar until no longer grainy. Add the softened gelatin and whisk until well-blended and smooth. Take the bowl off the heat and whisk in the chocolate ganache and 150g cream until well-blended. |
4. Continue assembling the dessert instead. |
