  • 1 cup butter, unsalted
  • 2 cups brown sugar
  • ¾ cup dutch-process cocoa
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 Tbsp. vanilla extract
  • 4 eggs
  • 1 ½ cups all purpose flour

directions

1. Preheat the oven to 350°F. Butter, line with parchment, and butter again a half sheet pan.
2. In a saucepan over very low heat, melt the butter, then add the sugar and stir to combine. Stir in the cocoa, salt, baking powder, and vanilla. Cool until you can comfortably test it with your finger (it should feel like comfortably hot bath water).
3. Whisk in the eggs until smooth, then add the flour, stirring until smooth. Spoon into the prepared pan and bake for 25 minutes, or until a toothpick poked in the middle shows only moist crumbs.
4. Cool for 15 minutes on a rack, then pull out the brownies with the parchment in one piece and let cool completely.
