    • 3 Old Fashioned Apple Pie

    • 18 ounces Granulated Sugar
    • 4 ounces Water
    • 3 ounces Glucose
    • 9 ounces Butter

    • 1 cup Heavy Cream
    • 1 tablespoon Vanilla
  •  
    • 3 ounces Choppped Chocolate
  •  
    • 18 ounces Mixed Nuts

directions

1. Use the wet method to cook this caramel. In a thick bottom sauce pan combine the sugar, water, and glucose. Note: as you caramelize this mixture please pay attention to the precautions that accompany cooking sugar solutions.
2. When the correct color is reached, pull the pan to the side and begin stirring in the butter carefully. Add the butter in a steady fashion, stirring constantly with a wooden spoon. You may have to return the pan to the flame periodically to get the butter to absorb the sugar mixture.
3. When the butter is completely mixed in, carefully add the cream in a steady stream. Again, stir constantly and be aware that the mixture will bubble violently when first added. Make sure the mixture comes back to a boil after adding the cream.
4. Remove from the head and add the chopped chocolate. Stir in. Allow the mixture to cool before adding the mixed cocktails nuts.
5. Place, already cooked and cooled apple pie, upside down on a cardboard circle and place on glazing rack. Pour caramel over pie covering top and sides completely. Place in refrigerator to set carmel.
6. Present pie on large plate with doilie. Make sure to glucose doilie to plate and also to glucose cardboard under the pie to doilie on plate.
