- ½ large bunch of broccoli, cut into chunks and blanched
- 1 can chick peas, drained and rinsed
- 1 pepper red pepper, diced
- ½ cup Feta cheese
- 1 scallions, finely chopped
- Vinaigrette:
- ⅓ cup olive oil
- 3 tbp TBSP red wine vinegar
- 1 teaspoon minced garlic
- ½ teaspoon salt
- ½ teaspoon ground black pepper

Cook the pasta and blanch the broccoli Make the vinaigrette by whisking ingredients together Add the pasta and broccoli to the vinaigrette, then the red pepper, scallions, chick peas and feta. Toss to coat and serve. |
